I'm interested in number of losses and their reasons. I'll be glad to have some additional information (such as texts about such fights, etc.)

The only think I know is that of a total of 19,000 Germans served in the Spanish Civil War. Of these, 298 were lost, with 173 being killed by the enemy. This included 102 aircrew, 27 fighter pilots and 21 anti-aircraft crew. A large number were killed in accidents and others died of illness. The Condor Legion lost 72 aircraft to enemy action. Another 160 were lost in flying accidents.
However I think the KG 51 used only a small number of prototypes in the spanish civil war (Dornier Do 17 E, Dornier 17 F, Dornier 17 P)

OK, so the Do-17E and F were around at the start of the war. The F was the reconaissance version of the 17E. The planes were downgraded to trainers and never saw service in WWII.
Then came the Do-17P. The engines used by the E and F were in higher demand for fighters, so a new BMW engine was adopted. The new engine was a radial, as opposed to the old inlines. The P had 500 more horsepower than it's older siblings. This was also the last of the pencil-nosed fighters; subsequent versions had a larger nose. This version did see service in WWII.
Lastly were a few prototypes. The Do-17S, of which 3 were made, and the Do-17U, of which 15 were made, were reconassiance planes as well. In these prototypes, the bottom defensive armament was increased to protect the Do-17's vulnerable belly. No word on if the 17S was used in service, but the 17U was requested by KG 100 for experimenting. 12 of them were actual production models delivered to KG 152 in Spain for combat.
